It happens whenever you open the pages of a glossy home magazine and flip through pages of exquisitely designed and appointed kitchens: envy.

Your eyes gloss over as you read what to look for in the latest professional six-burner gas ranges. You imagine what your kitchen would look like with a built-in stainless fridge next to twin dishwashers. And oh, the dinners you could make if only you had the latest designer cookware.
