Former owner to reopen Cactus Grille in Loveland

The Cactus Grille, a Southwestern-style restaurant in Loveland that closed down in the midst of the 2008 recession, will reopen its doors this March, pending the approval of its liquor license.

Former owner Mike Severance, his daughter Chrissy French and their business partner Geoff Fleming will reopen the restaurant at 119 E. Fourth St., just two doors down from its original home. The space was formerly home to the Baja Fish Co., where Severance also worked as a manager.

The owners plan to stick with much of the original menu, which they describe as Mexican with a Southwestern flair. It will include burritos, chimichangas, fajitas, chipotle chicken and stuffed sopapillas, as well as margaritas.

The designs for the space include the look of a Mexican village, and will eventually add patio seating along the side and behind the restaurant.

Besides the Cactus Grille and Baja Fish, Severance also managed at the Beach House Grill in Fort Collins, which closed Jan. 1.
