French bistro Cinq à Sept plans July debut in north Boulder
Concept from group behind Corrida, Oak at Fourteenth
BOULDER — Half Eaten Cookie Hospitality, the local restaurant group behind concepts such as Corrida, Oak at Fourteenth, C Bar and CBurger, plans to open its newest eatery — a French bistro called Cinq à Sept — July 7 in north Boulder.
Located near the Uptown Broadway community at 4580 Broadway, Cinq à Sept, a collaboration between Half Eaten Cookie’s chef Samuel McCandless and restaurateur Bryan Dayton, aims to provide “an elevated yet approachable dining experience rooted in hospitality, exceptional ingredients, and the joy of gathering around the table,” the company said in a news release.
The restaurant’s name is a French phrase that refers to “the cherished hours between work and dinner when friends gather for drinks and conversation,” according to the release. “Whether stopping in for a glass of wine and oysters, lingering over a Parisian dinner, or gathering with friends for an evening, Cinq à Sept aims to become a neighborhood destination where great food and genuine hospitality take center stage.”
McCandless, whose background includes French culinary training, said in the release that “French cuisine taught me that great cooking doesn’t have to be complicated. At its core, it’s about exceptional ingredients, thoughtful preparation, and creating memorable experiences around the table. That’s the spirit behind Cinq à Sept.”
Cinq à Sept comes on the heels of Half Eaten Cookie’s spring 2024 launch of C Bar and C Burger, a smashburger concept with an attached tavern that started as a kiosk at the Sanitas Brewing Co. taproom in Englewood before taking over the former Oskar Blues Brewery taproom and World of Beer space at 921 Pearl St., and the early 2026 closure of upscale Mexican eatery Bellota on Broadway.
