Comida to leave its Longmont roots

LONGMONT — Comida, the Longmont restaurant with the pink food truck, will close its original location Oct. 28  and concentrate on its metro Denver locations in order to continue growth, according to a report in Westword.

Rayme Rossello launched Comida in 2010 with the pink food truck. It opened a fixed location at 721 Confidence Drive, then expanded into Denver and Aurora locations at The Source and Stanley Marketplace.

The newspaper quoted Rossello as saying that while the Longmont location was her roots, she’s had to come to grips with the knowledge that growth is likely to happen elsewhere first, and she has to consider the future of the company. She isn’t interested in cost-cutting to make the Longmont location more profitable.

“We could get our vegetables from someone else, and not buy biodegradable, and pay less — because I pay more — but who can live on minimum wage? I could do those things and make it grow, but I’m not interested in that.”
