Barbecue chain Rudy’s opens in Greeley

GREELEY — Rudy’s Country Store and Bar-B-Q, a Texas-based chain, has opened a barbecue-centered restaurant in Greeley, its second location in Colorado and 40th overall.

The restaurant opened May 19 at 2473 28th St., a location that had been home for 12 years to a Johnny Carino’s Italian restaurant that closed in October 2013. The same Ford Restaurant Group that owns Rudy’s also is majority owner of Carino’s. When Carino’s closed in Greeley, Lakeway, Texas-based Native Land Investments, parent company of Ford Restaurant Group, bought the building for $1.4 million, according to Weld County property records.

Unlike many eateries that specialize in barbecue, Rudy’s is open for early risers as well, serving up breakfast tacos and more beginning at 7 a.m. daily. The location also includes a store where the chain’s meats and sauces are sold.

The chain’s other Colorado store is at 31st Street and West Colorado Avenue in the Old Colorado City section of Colorado Springs.

“Greeley is a beautiful, growing community, and we’re excited to open our second location in Colorado here,” said Pete Bassett, the chain’s vice president for operations, in a prepared statement. “We are looking forward to serving the residents of Greeley and its surrounding neighborhoods real Texas barbecue and making a difference in the community.”

The Greeley location opened in time to participate in the chain’s Camo Cup for a Cause fundraising drive, which it holds every May to benefit military-related nonprofits. Funds raised in Greeley will be donated to ThanksUSA, a charitable organization that provides need-based scholarships to colleges and technical and vocational schools for the children and spouses of U.S. military personnel.

The chain was born in 1989 in Leon Springs, just north of San Antonio in the Texas hill country, and named for Rudolph Aue, son of Max Aue, the town’s founder. The restaurants use oak wood-fired barbecue pits and cook their meats with a dry spice.
