Bradford Heap launches catering service

BOULDER – Bradford Heap, chef and owner of Salt Bistro in Boulder and Colterra Food and Wine in Niwot, has launched Bradford Heap Catering.

The catering company, located at 210 Franklin St. in Niwot, will offer a variety of menu items, including Southern French and Northern Italian cuisine for both formal and informal occasions. Heap specializes in offering seasonal food from local farmers, ranchers and purveyors.

“We use seasonal items, fresh fish, produce from Oxford Gardens and Munson farms, pork and beef from Colorado farms,´ said Sally Juliano, director of catering. “Fresh, local, lively is part of the personality we carry in our identity at the restaurants, but it also pertains to our food as well.”

Susan Lutz, event manager at Colterra for five years, is non the event manager for all Bradford Heap restaurants. Julie Pritchard, a manager at Salt Bistro, is the new general manager at Colterra Food and Wine.

Heap trained at the Culinary Institute of America and will cater a variety of venues.

“There’s flexibility and adaptability with any concept,” Juliano said. “He has created and identity and brand in this area. You can keep your brand in your food regardless of what kind of food you’re doing.”
