Denver eatery Avanti to open in former Boulder Cheesecake Factory
BOULDER — Avanti Food & Beverage, a collective eatery in Denver, will expand to Boulder and open a second location in the former Cheesecake Factory space in late 2019.
Avanti Boulder will be located at 1401 Pearl St. in Boulder. The 13,000-square-foot space will feature a rooftop deck, six different culinary concepts, two bars, coffee and pastries. The eatery will be open for lunch and dinner daily, with brunch served on weekends. Exact hours will be announced closer to opening. Oz Architecture is the lead architect, and Scout Interiors is handling interior design. Avanti is seeking chefs and restaurateurs interested in applying for one of the six restaurant spots.
“We have been actively seeking space in downtown Boulder for quite some time and are proud to announce an executed lease with Unico Properties,” Patrick O’Neill, co-founder of Avanti Food & Beverage, said in a prepared statement. “The former Cheesecake Factory space supports our core incubator model and the views spanning from the Flatirons to Sanitas on our roof-top deck are spectacular. “

In addition to serving as a collective eatery, Avanti is also a restaurant incubator, with concepts starting at the food hall before opening their own locations. Leases for individual concepts at Avanti Boulder will range from one to two years.
“We’ve seen seven concepts that started within Avanti in Denver break out into brick and mortar locations and we can’t wait to help foster the same success in Boulder,” O’Neill said. “We will collaborate closely with the City of Boulder and its various departments to make Avanti a destination for residents and visitors to gather day and night and support Boulder’s bustling culinary scene.”
Avanti operates in the LoHi neighborhood in Denver. The concept is inspired by European markets and provides a space for up-and-coming restaurateurs to test and refine their ideas.
