Austin’s American Grill opens in Greeley

GREELEY — Austin’s American Grill, a longtime Northern Colorado staple known for its upscale take on comfort food, opened its first location in Greeley Monday.

The restaurant is located at 1100 Eighth Ave., Suite 100, in the 55 Resort senior-living community.

“We’ve long awaited this moment,” said Bianca Fisher, executive director of the Greeley Downtown Development Authority. “It’s really exciting.”

Steve Taylor, president and CEO of Hot Corner Concepts, the restaurant group that owns Austin’s, said the group had been looking at putting a location in Greeley for a long time, and this was the perfect opportunity.

“We just thought that the timing was right for us and right for downtown,” Taylor said. 

Taylor said the extensive development and redevelopment activity downtown played a huge role in the timing being right. The Eighth Avenue corridor has seen a flurry recently. The Apartments at Maddie added a level of multifamily housing that was previously not available in the area. The former Gallery Furniture building is being redeveloped into another multifamily complex. And 55 Resort, in which Austin’s is located, is a luxury retirement community that will begin accepting residents in the near future.

Hot Corner Concepts also owns Comet Chicken, Big Al’s Burgers, and the Moot House. Taylor said the group also looked at bringing those concepts to Greeley, but it looked at all of the development activity downtown and saw the opportunity to bring a type of restaurant into the Greeley market that didn’t previously exist there.

“The opportunity that presented itself on Eighth Avenue really called for a full-service restaurant,” Taylor said.

Said Fisher: “The concept is really fitting because it doesn’t exist here. It’s going to be one-of-a-kind in the market.”

Taylor praised his staff at Hot Corner for pulling off a successful restaurant opening during a time when food products, construction materials, kitchen supplies, and just about everything else necessary to run a restaurant is subject to massive price inflation and supply chain issues.

“I’m blessed with a remarkable, remarkable team,” Taylor said. “We’ve been together for years and years. This team is spending so much time on sourcing products, materials, commodities, to make sure we don’t run out of anything. Our general manager is a terrific guy who has been with us for years. We are super excited to do this project.”
