Mac-and-cheese eatery opens Friday in Greeley

Cavatappi Gourmet Mac and Cheese, Northern Colorado’s only macaroni and cheese-centered restaurant, opens Friday in west Greeley.

The restaurant, started by Alex Kantor and Chris Williams, opens at 4 p.m. Friday. Kantor also owns coffee joint Specht Point Café in Fort Collins.

Kantor wanted to open a restaurant with a theme.

“It’s a really cool concept,” he said. “Who doesn’t like mac and cheese?”

The restaurant at 5750 W. 10th Street will feature 14 different kinds of mac-and-cheese dishes, as well as a build-your-own option and salads. It also will offer the choice of gluten-free pasta and cheese sauce.
