Mac-and-cheese eatery opens Friday in Greeley

The restaurant at 5750 W. 10th Street will feature 14 different kinds of mac-and-cheese dishes, as well as a build-your-own option and salads. It also will offer the choice of gluten-free pasta and cheese sauce.
Appetizers include mac-and-cheese bites, fried pasta with a signature sauce, fried mozzarella cheese balls and spicy chorizo dip.
Cavatappi will serve dessert, though not all are made of mac-and-cheese. Offerings include a s’more-like dish with a graham cracker crust, chocolate-covered pasta and roasted marsh mellows as well as a gluten-free Nutella torte.
The restaurant will be open 11 a.m. to 9 p.m. Sunday through Thursday and 11 a.m. through 10 p.m. Friday and Saturday. Operating in a 3,000-square-foot space, Cavatappi will employ 22 people, Kantor said.
The dine-in restaurant also will offer carryout, including family- and party-size orders.
