Boulder-based Organic Sandwich Co. opening shop in Louisville
LOUISVILLE — The Organic Sandwich Co. in Boulder plans to open a shop in Louisville this summer.
The Daily Camera reports that the sandwich shop is the latest restaurant to take a shot at 459 S. McCaslin Blvd., Suite 5, which until recently housed BlueBox Doughnuts.
“We wanted to grow ‘slow and steady as she goes,'” said co-owner Marcy Miller, of the 2-year-old business. “The concept has always been based on using local products, and Louisville is a similar demographic in the sense that people (there) do care about their food.”
