New Belgium to open pilot brewery at The Source Hotel in Denver

FORT COLLINS — New Belgium Brewing announced on Tuesday that it plans to open a 10-barrel pilot brewery at The Source Hotel in Denver.

In addition to brewing on the first floor, the brewery will have barrel aging on the eighth floor in a rooftop lounge called The Woods where The Source Hotel and New Belgium will collaborate to pair beers with snacks and sit-down dining.

The Source Hotel, set for construction to begin this summer with an early 2017 opening, will be part of the larger The Source culinary complex in Denver’s River North, or RiNo, neighborhood, that will include restaurants, a bakery, coffee roaster, bank, butcher, cocktail bar, florist, gallery, cheese shop and produce vendor. Zeppelin Development is behind the project, though Zeppelin plans to work with the operators of Boulder’s St. Julien Hotel and Spa to run the hotel.

The New Belgium pilot brewery will be 2,000 square feet, with beer brewed there serving The Source Hotel as well as the expanded market hall. The operation will include 50 oak barrels for on-site aging.

“We’ve long considered creating a Denver location to bring the New Belgium experience to more of our Colorado fans and to the millions of travelers who visit Denver,” New Belgium director of strategy and sustainability said in a prepared statement. “RiNo is already a vivid scene with a rich art and craft beer culture, and will soon have great access for bikers and walkers. This small batch brewery will allow us to collaborate with The Woods’ chef and mixologists to create innovative beers, drinks and pairings you can’t get anywhere else.”
