Mozzarella bar planned for Louisville

LOUISVILLE – Boulder’s Bacco Trattoria & Mozzarella Bar chef Marco Monnanni is opening a new restaurant at 1132 West Dillon Road in Louisville in January.

Parma Trattoria Mozzarella Bar will feature different cheeses and meats from Italy and a special marble mozzarella bar area that will seat 12 people. Monnanni was not immediately available for comment about the new location.

In all, the new restaurant will have room for 120 people inside and another 50 people at a seasonal outdoor patio. Monnanni’s partner Emilio Perna Ruggiero knows the Louisville area well as the former general manager of Pane e Vino restaurant in Louisville about seven years ago.

Monnanni also has a Bacco Trattoria restaurant at 10125 West San Juan Way, Unit 150, in Littleton. The Boulder restaurant is located at 1200 Yarmouth Ave., Unit A.

Monnanni was born in Rome and was a restaurant apprentice by age 14. He has been a chef and partner at Antica Roma and Acqua Pazza in Boulder and in Pane e Vino, according to information on the Bacco Trattoria website.
