Chef Heap tinkers with Le Chantecler’s winning recipe

NIWOT – Looking out over his popular – and packed – restaurant, Bradford Heap muses over the changes he’s contemplating.

He’s already revamped the menu of Le Chantecler, the renowned Niwot restaurant founded by Colorado celebrity chef Radek Cerny in 1999. And he’s in the process of changing the name to Colterra to reflect the shift away from Le Chantecler’s country French cuisine and toward a blend of southern French and northern Italian food, featuring locally sourced, seasonal ingredients.
