Grain-free restaurant Blooming Beets opening in May

BOULDER – Blooming Beets Kitchen, a grain-free restaurant, will have a grand opening Saturday, May 17, at 3303 30th St. in Boulder.

Owner and founder Iva Paleckova has spent three years bringing the restaurant to fruition. She said this will be the first of its kind in the Boulder area. The owner and staff are labeling it “Colorado’s Healthiest Restaurant.”

“There isn’t a restaurant around here like Blooming Beets,” she said. “We definitely need one – there are many people who can’t eat out because they have celiac or other autoimmune diseases. We recognize that.”

Paleckova said that Blooming Beets Kitchen will not use any processed ingredients and will locally source ingredients from farmers when possible. The restaurant will feature a gluten-free seasonal menu with dishes created from organic vegetables, meats and healthy fats. According to a release, the restaurant will be Boulder’s first 100 percent grain-free, flour-free, added sugar-free and seed-oil free restaurant.

Blooming Beets will be open for breakfast, lunch and dinner. The kitchen will be headed by executive chef Brittany Kerr, originally from Pittsburgh, Pa.

The restaurant was funded in-part by a crowd funding campaign that raised approximately $10,000 in a little more than one month, according to Paleckova.

“People are so excited for a restaurant like this,” she said. “Even people who will never even come to Boulder wanted to support us; we got donations from all over, even Florida and California.”
