Arcana taps new executive chef

BOULDER — Aracana, an upscale eatery on Walnut Street in Boulder owned by Annie and Elliott Toan, has named Samuel McCandless its new executive chef.

McCandless experience includes work in kitchens at Boulder’s Frasca Food and Wine, San Francisco’s Fifth Floor and Laurent Gras’ L20 in Chicago, according to an Arcana news release. At Aracana he will work alongside sommelier and general manager Michael Elmore and sous chef Luke Miller.

Arcana’s menu will feature “new, seasonal changes and for the first time, two tasting menu options, a three-course and a five-course,” according to the release. “ … McCandless is also taking a fresh look at Arcana’s brunch menu, keeping the classics and adding a few new dishes.”
