BOULDER — Basil Flats, a quick-casual Mediterranean restaurant, plans to open a restaurant in Boulder this March.
Basil Flats serves grilled sandwiches, salads, falafel and pizzas.
If asked to identify any emerging theme resulting from the events of 2020, I’d have to say that we are challenging historical norms at a record-setting pace. There is a large degree of discord in our political system regarding the state of our economy and the suggestions on how to fix it are endless.
Longmont-based Basil Flats was founded five years ago by former Noodles & Co. executive Joe Serafin and has been operating its first restaurant at 1067 South Hover St. in Longmont since the company was founded.
The 3,200 square-foot restaurant in Boulder will be at 2900 Baseline Road in the space previously occupied by Drakes Haus Boulder. Prior to Drakes Haus, the space was occupied by Noodles & Co., where Serafin was chief operating officer, a board member and founding investor.
Basil Flats makes its entrees from scratch using many ingredients supplied by local farms including Zwecks, Ollin, Full Circle and Boulder Lamb.
“Our focus is on slow, local growth,” Serafin said in a prepared statement. “After five years, we’ve found a second location that feels right for us and the community. This expansion also allows us to do something we are passionate about — expanding our Boulder Valley farm partnerships and creating more awareness.”
