Farmers’ market vendor opens cafe

BOULDER – Boulder County Farmers’ Market vendor Tres Pupusas has opened a lunch spot.

The Latin Cafe is at 2825 Wilderness Place, Suite 500 in Boulder. The Latin-inspired menu includes pupusas, which are dough pockets with fillings; pastelles, a type of El Salvadoran pastry; and Salvadoran tamales, said Cindy English, owner. The cafe and the company’s commercial kitchen are in the same location, she said.

“We’re hoping for rapid growth,” English said. “Just this week, we’ve doubled our production line.”

Frozen four-packs of Tres Pupusas’ pupusas are also available at 11 Whole Foods Markets in the region and at Ideal Market at 1275 Alpine Ave., in Boulder. Frozen pupusas also be available at the new Alfalfa’s Market at Arapahoe Avenue and Broadway in Boulder when it opens, English said.

Pupusas are a traditional El Salvadoran food item – rice or corn tortillas stuffed with a variety of options. Tres Pupusas flavors include spinach and cheese, green chili and cheese, mushroom, leek and cheese, pinto bean and cheese, chicken and cheese and carnitas. The restaurant also has vegan options. The pupusas are free of gluten.
