Brewsters opening MidiCi pizza parlor in south Fort Collins

FORT COLLINS — Frank and Kim Brewster expect to open a MidiCi pizza parlor franchise at Harmony Commons in south Fort Collins this July.

The Los Angeles-based MidiCi The Neapolitan Pizza Co. chain is known for authentic, traditional Neapolitan cuisine with natural, fresh, nonGMO ingredients.

The restaurant will be at 3581 East Harmony Road, Suite 170. MidiCi features an open kitchen surrounded by a bar and dining tables, wood-fired ovens hand-built in Naples, a Vittoria prosciutto slicer and an Athena espresso machine.

“We didn’t want to open an average restaurant,” Frank Brewster said. “Midici combines fine, fast and a casual restaurant all in one. It’s a sensory, interactive experience and like no other restaurant. We look forward to building a team of friends who can help not only serve the great foods, but also create a genuine relationship with the local Fort Collins community.” The Brewsters previously owned the Days Inn in Greeley for 12 years before deciding to open MidiCi.

Customers can select from traditional and signature menu options or create personalized Neapolitan pizzas. Midici also offers vegan and gluten-free options.

MidiCi (pronounced mee-dee-chee) was launched in 2015 with a goal of opening 50 locations nationwide by 2017 and 400 within the next six years.

Los Angeles-based restaurateur and executive chef Peppe Miele, along with chef Mario Vollera, both Italian natives and Neapolitan pizza chefs, created the menu — from artisan burratas and traditional Neapolitan pizzas to a selection of craft beers and wines.

Hours of operation will be Sunday through Thursday from 11 a.m. to 9 p.m. and Friday through Saturday from 11 a.m. to midnight.

The Brewsters are looking to hire about 50 people to staff the restaurant. They are looking for prep chefs, salad chefs, bakers, pizza-makers, bartenders, waiters and dishwashers. To apply, go to mymidici.com/careers.
