Oskar Blues opening restaurant in historic Colorado Springs building

LONGMONT — Oskar Blues’ restaurant ownership group on Wednesday said it will open a restaurant and bar in the historic DeGraff Building in the heart of downtown Colorado Springs.

Longmont-based Oskar Blues Fooderies expects the restaurant at 118 N. Tejon St., to be open by summer 2017.

It will occupy 15,000 square feet on two levels. The restaurant space, located on the street level, will feature southern-inspired specialties — slow smoked locally sourced meats, grilled burgers, New Orleans-style grilled oysters and seafood.  It will feature 43 craft beers from around the country, including Oskar Blues Brewery’s staples and limited-release beers.

Oskar Blues’ lower level entertainment “grotto” will feature two underground bocce courts, a singer/songwriter stage and private party-friendly lounge that will offer Oskar Blues Brewery favorites and craft breweries from around the country.  Oskar Blues also plans to have an outdoor back patio.

Susan Edmondson, president and chief executive of the Colorado Springs Downtown Partnership, said the restaurant is expected to create 75 jobs.

Oskar Blues Fooderies is due to open its third CHUBurger this winter in the RiNo district of Denver. Its coffee-roasting operation, Hotbox Roasters, will open next door, serving doughnuts and espresso.
