Flagstaff House chef wins episode of Food Network’s ‘Chopped’

BOULDER —  Chris Royster, a chef at the Flagstaff House restaurant in Boulder, won an episode of “Chopped,” a cooking competition television show that airs on the Food Network.

Royster, a chef de cuisine, competed against three contestants, including chef Brother Luck in Colorado Springs.

The competition begins with four chefs and consists of three rounds of meal preparation, with one chef being eliminated after each round by a panel of judges until one chef remains and is named champion. In each round, chefs are tasked at preparing a meal using a predetermined set of ingredients.

Royster’s three dishes were Chicken Liver Rillette with kale mostarda, pickled kale and toasted sevkac; Spicy Goat Ragout, with curry cashew and butternut squash puree and yogurt raita; and Roasted Pork and Maple Ice Cream with Rolled-Up Apple Pie, candied bacon caramel and mascerated figs.

Chris’ older brother Adam is a chef who worked at Flagstaff as an intern and then a chef de cuisine. Chris Royster followed his brother from New York to Colorado, first working at Red Rocks Amphitheater, then cooking at various restaurants through the Three Leaf Concepts entities, including The Huckleberry Café.
